Marshall Wharf Brewing Co has receive, and started filling, 8 Single Malt Scotch Whisky casks for beer aging following their recent trip to Bowmore Distillery in Scotland. The casks, 4 ex-Bourbon and 4 ex-Sherry have been used to age Bowmore Single Malt whisky and will now lend their profiles to some of the great brews produced by Marshall Wharf Brewing Co in Belfast Maine. The Bourbon casks, made from American White oak originally aged Bourbon whilst the Sherry casks, from Jerez de la Frontera in Spain, originally aged Pedro Ximenez sherry. Unlike most breweries who age in randomly selected barrels from a supplier, these casks were hand selected following tastings of the Marshall Wharf beers by whisky expert/author Charles MacLean, Food pairing expert/author Martine Nouet, Director of Operations/Chief Blender Morrison Bowmore, Andrew Rankin and Process/Sprit Quality Manager Morrison Bowmore, Jeremy Stephens. Samples will start to be selected from the casks in about 5-6 weeks and the first offerings should be available in time for the “5th Year of Beer” celebrations at the Brewery in Belfast, Saturday Oct 13th, 2012.
